Sponge Cake, any recipe of your preference, size 11”x15”x1”

Weight approximately 350 g

Ring Cutter, 2” diameter

Cake Ring, 2” diameter, cover with aluminum foil  

Method

1.Cut sponge cake with ring cutter. Set aside.

Method (for Cream Soda Mousse)

1. Bloom gelatin powder in hot water, set aside.

2. Mix Hale’s Blue Boy Concentrated Cream Soda Flavored Syrup, egg yolk, salt and salted butter together. Cook over hot bath till pasteurized and thickened. Remove from heat and add gelatin. 

3. Beat cream cheese with paddle attachment on medium speed for 10 minutes. Add custard. Mix till combined

4. Place round sponge cake in the ring. Add mousse to ¼ of the ring. Place one more chocolate sponge and add another layer of mousse to ¾ of the ring. Refrigerate to set and coat with jelly. Refrigerate to set again and remove from ring. Decorate nicely and serve.

Method (for Jelly Coating)

 1. Mix all ingredients together. Bring to boil and remove from heat. Set aside to cool down.

Remark : Ratio of concentrated syrup and other ingredients can be adjusted according to consumers preference in each region.
