Cream Soda Fudge Cake

Ingredient

Corn Starch                       140 g
Butter, salted                  40   g
Water (1)                   300     g
Evaporated Milk               200    g
UHT Coconut Milk              500     g
Water (2)                           500     g
Sugar                     200     g
Hale’s Blue Boy Concentrated Cream Soda Flavored Syrup   200  g
Green Apple Water Color         1 / 2   tsp
Agar Powder                          1   tbsp
Sponge Cake, any recipe of your reference
Size 11”x15”, 1” height (weight 200 g each)   6     pcs
Thai Egg Rolls, Chocolate Curls and Mint Leaves for decoration

Method

1. Mix corn starch with water (1). Add evaporated milk and green color. Mix well and set aside. 
2. Boil UHT coconut milk with water (2), sugar, Hale’s Blue Boy Concentrated Cream Soda Flavored Syrup and agar powder till boiled. Remove from heat, add salted butter and mix till incorporated well. Set aside.


Assembling Cake

1. Lay first layer of sponge cake on a tray, wrapped with cling film. Spread Cream Soda Fudge on top. Repeat till complete all six layers. Refrigerate to set. Cut to slices.
 2. Decorate with Thai egg roll, chocolate curl and mint leaves. Keep chilled till served.
