Method

1. Make ruby and emerald water chestnuts by soaking water chestnut in Hale’s Blue Boy Concentrated Cream Soda Flavored Syrup and Sala Flavored Syrup.

2. Once water chestnuts absorb nice color, strain and coat with cassava flour lightly.

3. Boil in boiling water and blanch in cold water. Set aside.

4. Boil sweet potatoes, pumpkin and taro just to cook. Set aside.

5. Mix water with sugar and salt. Once mixture starts to boil, add coconut milk and mix well.

6. Add sweet potatoes, pumpkin, taro, ruby water chestnut and emerald chestnut.

Remark : Ratio of concentrated syrup and other ingredients can be adjusted according to consumers preference in each region.
