Thai Coconut Glutinous Rice Cakes

Ingredient

Glutinous Rice Flour                   160     g
Salt                          ½     tsp
Sugar                       300     g
Coconut Cream                       200     g
Coconut Meat, Shredded                  400   g
Square mould, 6 x 10 x 3 inch, lined with aluminum foil    1    pcs
Ingredients (Cream Soda Topping)
White Chocolate, melted                   400     g
Whipping Cream                      200     g
Hale’s Blue Boy Concentrated Cream Soda Flavored Syrup   200    g
Red Maraschino Cherries, dipped in white chocolate for decorating

Method

1. Mix all ingredients together.
2. Pour into the tray and bake at 400 degree Fahrenheit for approximately 40 minutes. Leave to cool completely.
3. Cut the dough to fit the square mould with aluminum foil. Set aside.




Method
1. Mix melted white chocolate with whipping cream and Hale’s Blue Boy Concentrated Cream Soda Flavored Syrup. Emulsify well.
2. Pour the mixture on top of the first part. Refrigerate till set.
3. Cut the cake in desired size. Decorate with cherries dipped in white chocolate.
