Thai Coconut Glutinous Rice Cakes
Ingredient
| Glutinous Rice Flour | 160 | g |
| Salt | ½ | tsp |
| Sugar | 300 | g |
| Coconut Cream | 200 | g |
| Coconut Meat, Shredded | 400 | g |
| Square mould, 6 x 10 x 3 inch, lined with aluminum foil | 1 | pcs |
| Ingredients (Cream Soda Topping) | ||
| White Chocolate, melted | 400 | g |
| Whipping Cream | 200 | g |
| Hale’s Blue Boy Concentrated Cream Soda Flavored Syrup | 200 | g |
| Red Maraschino Cherries, dipped in white chocolate for decorating | ||
Method
1. Mix all ingredients together.2. Pour into the tray and bake at 400 degree Fahrenheit for approximately 40 minutes. Leave to cool completely.
3. Cut the dough to fit the square mould with aluminum foil. Set aside.
Method
1. Mix melted white chocolate with whipping cream and Hale’s Blue Boy Concentrated Cream Soda Flavored Syrup. Emulsify well.
2. Pour the mixture on top of the first part. Refrigerate till set.
3. Cut the cake in desired size. Decorate with cherries dipped in white chocolate.
